Black pepper (Piper nigrum), the king of spices, is one
of the oldest and the most popular spice in the world. Black
Pepper
is the dried mature berry of Piper nigrum.Black pepper (Piper
nigrum) is a flowering vine in the family Piperaceae, cultivated
for its fruit, which is usually dried
and used as a spice and seasoning. The same fruit is also used
to produce white pepper, red/pink pepper, and green pepper.
Black pepper is native to South India (Tamil: milagu,Telugu:
miriyam) and is extensively cultivated there and elsewhere
in tropical regions.In trade, the pepper grades are identified
by their origin. The most important Indian grades are Malabar
and Tellicherry
(Thalassery).
Available Grades : 500g/l and 550g/l
White pepper is obtained
by removing the outer part of the pericarp of the ripened berries.
Cardamom:
Cardamom (small)
Cardamom is a perennial, herbaceous, rhizomatous
plant. Based on the nature of panicles, three varieties are
recognized viz.
Malabar with prostrate panicle, Mysore with erect panicle,
and Vazhukka with semi erect panicle.

Cardamom
(large)
Large Cardamom is a perennial herb with subterranean
rhizomes and 50-140 aerial leafy shoots. Each shoot has height
of 1.7
to 2.6 mtr and possess 9 to 13 leaves in each tiller. Leaves
are glabrous on both sides with a prominent mid-rib. Inflorescence
is a condensed spike with yellowish perianth. Each spike has
10-15 fruits. Fruit is round or oval shape, capsule with reddish
brown colour.
Chilli
Chilli is the dried ripe fruit of the genus Capsicum.
India is the largest producer and exporter of chillies. The
most
important Indian grades are Sannam, Mundu, Rari (Patarki or
Patli) and Gospurea.
Cinnamon
Cinnamon, a bushy evergreen tree of the laurel family
(Lauraceae) is native to Sri Lanka (Ceylon). Cinnamon is the
dried inner
stem bark of the tree. The spice is light brown in colour and
has a delicately fragrant aroma and warm, sweet flavour. It
is lighter in colour and milder in flavour than the other related
species.
Clove
Clove, small, reddish-brown flower bud of the tropical
evergreen tree Syzygium aromaticum of the family Myrtaceae.
Clove clusters
are plucked by hand when the buds are fully developed with
a pronounced pink flush and then dried over several days in
the sun. Unopened flower buds, leaves and stalks yield essential
oil.
Cumin
Cumin Seeds is commonly known as "Jeera" in
India. The dried fruit used both as whole cumin seed and or
as powdered
form is esteemed as a condiment in most spice eating cultures.
