Peas are one of the most popular processed vegetables, either
canned or frozen.
Fresh pods of Green peas are harvested from
farms. Careful selection and sorting is done and the peas
are immediately
processed and frozen to give the farm fresh taste to the
customers. Peas for freezing are of the sweet type, especially
developed for deep- green color.
Frozen peas are not usually
sized, although a limited supply of excellent-quality small
round or early June type
peas are frozen. "Garden ran" or "field
ran" means no size separation has been made. "Assorted
sizes" means two adjacent sizes. "Mixed sizes" means
three or more sizes. "Sifted" means that some
sizes have been removed.
Generally frozen vegetables retain
more vitamins and seem to taste fresher.Frozen vegetables
have advantages over fresh ones, in that they are available
when the fresh counterpart is out-of-season,
they have a practically infinite shelf life when kept in
a freezer, and that they often have been processed a step
or more closer to eating.
